                         Gajar ka halwa or carrot halwa is a famous Indian sweet made with fresh carrots, full cream milk  &  sugar. Carrot halwa is one of the classic Indian sweet which impress everyone. This rich & sweet dessert is mainly associated with North India especially in punjab. And this is popular in Pakistan too.

Carrot halwa is popularly known as 'gajar ka halwa' or 'gajrela'. Its very tasty, rich &  toothsome sweet which presence in most festivals, celebrations & parties. This carrot halwa is made often during winter as carrots are full in season. And it's popular across India, the functions & wedding meals end with this delicious sweet after a heavy meal.

                        Carrot halwa or gajar ka halwa is a slow Cooked sweet by simmering Grated carrots in full fat milk & sweetened with sugar. And it's flavoured with cardamom powder & garnished with chopped nuts.
Generally, in North India it is made with delhi carrots (red carrot). If its not available you can go for normal carrot. But always prefer red carrot than regular ones,  as red carrots are tender, juicy & flavourful.

Carrot halwa or gajar ka halwa is very easy to prepare with less ingredients. This delightful sweet had stolen everyone's heart that whenever we have this, me &  my family crave for more. And also I love this halwa along with a scoop of vanilla ice cream, and it's the best combination ever I had tasted.

Try this easy recipe and treat your taste buds with lip smacking sweet...
Keep in mind that, here I have given the recipe for very less quantity, just double the measurements to  make in large quantity.
And time depends on the quantity you make.
                     

Preparation time :10 minutes
Cooking time :25 minutes
Serves : 2 servings

Ingredients :-

  •  Carrot - 4 medium sized (grated)
  • Sugar -  3-4 tblsp
  • Full fat milk - 1cup
  • Ghee - 2 tblsp
  • Cardamom powder - 1/2 tsp
  • Chopped nuts -  1/2 cup (almond, cashew)

 
Method to prepare :-


  1. Heat a nonstick saucepan, add ghee. Then add Grated carrots into it and saute well.
  2. Close the lid and cook for 5 minutes on medium flame.                   
  3. When the  colour changes, turn into simmer, add sugar  & saute well until the raw taste goes,and the carrots are almost cooked.       
  4. When it is combined all together, pour milk and mix well. Let it boil on low flame.                                                                         
  5. When it starts boiling, add cardamom pwd. Keep stirring constantly till the milk has completely dried and it has formed very soft & combined texture. And it may not stick to the pan. Add chopped nuts, mix and turn off the flame.                                     
  6. Garnish with nuts and serve hot or cold, as you desire.....
