This chicken roast is a very special recipe prepared in iron kadai which gives you an ultimate taste for this recipe. This brings you an authentic flavour of south indian dish. And also very less oil is used in this. You can also prepare in any other vessel or non stick pan, but you won't get this exact taste ,even then you can try this because its very easy & tasty......
 However,chicken is favourite item for all adults &kids who love non-veg,so i always try to make different recipe of chicken.I think all of us do the same,right??

preparation time:5 minutes

cooking time: 25 minutes

Ingredients :

For marination -


  • chicken -1kg (cut into medium pieces)
  • Red chilly powder - 2 tblsp ( you can also add kashmiri red chilly pwd for more colour)
  • turmeric powder  - 1/4 tsp
  • pepper powder -1/4 tsp
  • cloves -3 -4 
  • cumin seeds - 1/2 tsp
  • cinnamon stick - 2 small pieces
  • garlic -3 big cloves
  • ginger - 1 small piece
  • green chilly -2 medium sized 
  • vinegar -2 tsp 
  • salt -1 tsp

For roasting  -

  • oil -3 -4 tblsp
  • onion -2 medium sized (chopped into cubes)
  • salt -according to your taste
  • curry leaves -2 tblspn
  • green chilly -2 for garnishing ( optional)

Direction :               

  1. Take a small grinder ,put all the ingredients of marinating except chicken,vinegar &salt into the grinder and make a fine paste.                                                                                                            
  2. Take chicken pieces already washed & drained well in a bowl , add the ground paste & marinate the chicken pieces.                    
  3. Add salt & vinegar and mix well .Keep this covered for at least 20 mins. If it is marinated overnight it will be more tastier.                                                                                                
  4. Heat iron kadai (wok)add marinated chicken,,close with a lid and cook for 10 mins in medium flame .should not add any excess water.                                                                                   
  5. Then chicken will be half cooked,open the lid and cook until all water from the chicken dries. give a mix in between that it may not stick to the bottom.                                                                       
  6. When the gravy is almost dried, add chopped onions & curry leaf and saute it for a while. In this stage adjust salt & chilly pwd according to your taste.                                                                 
  7. Add oil and roast it until all the chicken pieces turns little brown & coated. Be careful not to fry too much,  that the chicken not become harder.                                                                 
  8. Finally turn off the flame & garnish with curry leaf ,coriander leaf & green chilly.
serve this hot , squeeze lemon pieces as you desire.
