                                  Malabar Chicken curry

                       

This is a traditional chicken curry mostly prepared in my home town. The main ingredient in this recipe is, 'Coconut milk'  &  'roasted Coconut paste', which makes this chicken curry very special. We often  use Coconut in most of our recipe, because the name of our state (that is kerala in South india)  itself defines that. The word 'kerala' comes from 'kera' in malayalam, which translates to Coconut. So land of Coconuts - "keralam" (which is how  malayalees  call 'kerala'). 

Malabar Chicken curry is made by toasting authentic kerala spices with roasted Coconut. And this is my easy recipe for malabar chicken curry by adding roasted Coconut paste, to make it easy. Its very tasty and easy to prepare without much effort. 
Normally, we serve this curry along with ghee rice, rice roti.... It is also tastes best with parathas.... 

Preparation time : 10 minutes 
Cooking time : 30 minutes 


Ingredients :-

  • Chicken  - 1kg (cut into medium pieces)
  • Onion -  2 large (sliced) 
  • Tomato  - 1 large
  • Green chilly  -  8- 10 ( finely chopped) 
  • Ginger &  garlic  paste - 1 tblsp  of each 
  • Turmeric powder - 1 tsp
  • Coriander powder -  1 tblsp
  • Pepper powder  - 1/2 tsp
  • Cumin powder -  1/4 tsp
  • Garam masala powder -  1/2 tsp
  • Curry leaf  -  1 tblsp 
  • Coconut milk  -  2 cups 
  • Roasted Coconut paste  -  2 tblsp 
  • Coriander leaf -  for garnishing 
  • Oil -  3 - 4 tblsp
  • Salt to taste 


Method  :-

  1. Heat oil in a vessel, add sliced onions &  fry till it turns golden brown.                                                                                                     
  2. Then add chopped green chilly, ginger - garlic paste &  curry leaf, saute it till the raw smell goes.                                                        
  3. Then add chopped tomato  and saute it for  a while.                             
  4. Next goes all the powders into it, (turmeric pwd, coriander pwd, pepper pwd, cumin pwd, garam masala pwd). And mix well .                                                                                                         
  5. Add chicken, mix well.Also add salt as required . Cover and cook on medium  flame for 10 mins.                                                     
  6. Mix roasted Coconut paste in Little water and add to the curry, when the chicken is almost Cooked. Add more water as per the consistency you need. Let the curry boils &  chicken is cooked well.                                                                                                          
  7. Add thick Coconut milk, mix well. Do not boil after adding Coconut milk, just cook for few seconds and turn off the flame.                                                                                                      
  8. Finally garnish with chopped coriander leaves, keep covered until served.
