                                  Chicken kabsa



                                         

    Here is another recipe of Arabic rice known as 'kabsa' rice. Kabsa is a mixed rice dish made with rice &  meat. This originates from saudi arabia, also popular in other Arab countries. All Arabic rices are similar to each other, only slight variants are made in preparation of  chicken or mutton . This  Kabsa is made of chicken, that is slowly simmered in a spicy broth of spices &  Tomatoes. This chicken is then removed and either fried or  grilled  while  the broth is used to cook the rice.
You can prepare this rice with chicken or mutton, as your choice. Both tastes great..
It is like the Arab version of biriyani, but it's easy to prepare. Comparatively less ingredients are used in this, than biriyani.
So, This is the best dish you can prepare as a special within short time. Serve kabsa with a fresh mixed  cucumber, carrot, lettuce and tomato salad.
Try to serve in a large plate &  eat together in a traditional way, and it feels awesome!!

Preparation time : 10 minutes
Cooking time :25 minutes
Serves : 4-5 persons

Ingredients :-


  • Chicken  -  1kg cut into 4-6 pieces
  • Long grain rice (Basmati) - 2 cup (soaked for 20 mins)
  • Boiling water - 3 cups
  • Onion - 1 large
  • Chicken stock cube - 1
  • Garlic paste - 1 tblsp
  • Tomato - 1 medium size
  • Tomato ketchup - 1tblsp
  • Green chilly - 3
  • Olive oil - 4tblsp
  • Cumin  -  1/2tsp
  • Cardamom pod - 5-6
  • Black pepper corn - 15
  • Cinnamon stick - 3
  • Dry lemon  - 1
  • Bay leaves -  2
  • Dry ginger - 1/2 inch
  • Arabic spice powder /kabsa masala - 1 tsp
  • Salt  to taste


Directions :-

  1. Heat oil in a  vessel, add onion and roast it until it soften. 
  2. Then add garlic paste & green chilly. Again roast it till raw smell goes. 
  3. Next add tomato &  saute it, allow it to mash. 
  4. Add tomato ketchup & salt, mix well. 
  5. Add whole spices, Arabic spice pwd &  chicken stock cube, mix well. 
  6. Add chicken pieces to it, then cover & cook for 2-3 mins. Then flip chicken pieces &  again cook for 4-5 mins. 
  7. Pour boiling water & cook  until the chicken is well Cooked. 
  8. Remove the chicken and keep it aside. Add the soaked  rice to the chicken broth, mix well, add more salt if needed. Cook in low flame until the water dries up. 
  9. Heat oil in a pan &  shallow fry the chicken pieces. 
  10. Just give a mix to the rice, then spread the chicken pieces on top of the rice. Cover it &  keep warm until served.
