This is a recipe of simple carrot cake. Its very tasty, moist & flavourful. The  beautiful colour of carrots makes a wonderful cake & best item  for tea-time snack. Its also very easy to prepare and makes a large carrot cake. 
Usually, we prepare vanilla or chocolate flavoured cake, but with this recipe you can surprise everyone with a special cake, because most of the people couldn't recognise the taste of carrots in this , unless we reveal the ingredients. And an interesting fact is that, we can bake this cake in stove top. So, no worries for those who don't have oven.

Preparation time : 10 minutes 
Cooking time :30 - 45 minutes 

Ingredients  :-

  • Carrot - 3 medium size (grated) 
  • All purpose flour - 2 cup
  • Egg - 3
  • Sugar ( powdered) - 1 1/2 cup
  • Vegetable oil - 3/4 cup 
  • Vanilla essence - 1 tsp
  • Cardamom powder -  1/2 tsp 
  • Baking powder - 1 tsp
  • Nuts (of your choice) - for garnishing
  • Ghee / butter - 2 tblsp


Method :-

  1. Take a mixing bowl, add sugar pwd, all purpose flour, baking powder and mix well.                                                                                      
  2. Take a mixer jar, and add Grated carrot, eggs, oil, vanilla essence & cardamom pwd. Then blend it into a smooth mixture.                                                                                                    
  3. Mix the carrot mixture & flour mixture together without any lumps in it.                                                                                               
  4. Grease butter in  a large saucepan, & heat it covered for 5 mins.  Keep  a tawa under the pan.                                                                  
  5. Then pour the batter into the pan, cover it & cook on low flame for 30 - 45 mins.                                                                                     
  6. After 30 mins, open the lid &  insert a tooth pick or skewer in the  middle and check. If it is  cooked completely, the skewer would come out clearly. If it's not, cook for couple of minutes till it is done. Then turn off the flame. Let it cool completely.     Transfer it into a plate, cut into pieces as you desire, and serve it.
