                              This is a popular Indian dessert served in any religious celebrations, Indian festival, special occasions... 
In South India this kheer is also known as 'payasam'. It's similar to this kheer, but they use Coconut milk & jaggery. And also made with other variations. 

What is kheer

Rice Kheer (pudding) is a common Indian dessert,originating from the indian subcontinent. It is  made with three basic ingredients - rice, milk and sugar. And flavoured with cardamoms, nuts, rose water, Saffron as different choices. All the basic ingredients are readily available everywhere, so that's the reason it's made commonly all over India . And it's best way to finish off an Indian meal. 

However, kheer can be made with other variations, with tapioca pearls, broken wheat, carrot & many other. But the best & popular among all these is rice kheer. 

I remember, since my childhood my mom used to serve this  in every eid. And it is one of the best dish by her, that everyone used to appreciate her for this recipe. So, obviously I took the same recipe from her to  taste the best kheer. 
Basically, this rice kheer is prepared with 'Basmati rice' (long grain rice), but we used to prepare with short grain rice ( commonly used for ghee rice). I feel it more tastier than Basmati rice, but you can prepare as your choice.. This can be served hot or cold, both tastes delicious... 

Preparation time : 5 minutes 
Cooking time :30 minutes
Serves : 4-5 servings

Ingredients :-

  • Full fat milk -  1litre
  • Short grain rice (used for ghee rice)  - 1cup(soaked for 10 mins) 
  • Sugar - 2-3tblsp
  • Condensed milk -  250 ml
  • Water -  as required 
  • Nuts chopped(of your choice)  - 1/4 cup 


Method :-

  1. Take a mixer jar, add soaked & drained rice into it, then just crush once. Do not crush finely. 
  2. Take a bottom thick vessel add milk &  crushed rice and keep it for boiling on medium - high flame by stirring constantly. 
  3. When it starts to boil, turn into simmer. If it thickens add little water. Then add sugar & slow cook. 
  4. Cook stirring constantly till all the sugar dissolves well. Then add condensed milk &  mix well. In this stage, you can add khova /mava, this is  completely optional. 
  5. Slow cook by stirring continously until you get semi - thick consistency. And taste depends on how long you stir. Keep attention, do not cook on high flame that it may get thicker when it cools down. Keep stirring on low flame. 
  6. When you get the right consistency turn off the flame and transfer into serving bowl, garnish with chopped almonds, pistachio, few Saffron strands.....
  7. You can serve this hot or chilled.. I prefer chilled.
